Angela’s Christmas Pudding

Impress the family this Christmas with the indulgence of a rich, fruity and homemade Christmas pudding.

Serves:

2 large or 3 small puddings

Ingredients:

110g Durrow Mills Sprouted Fine Flour or Bakers Mix Flour
340g Raisins
340g Sultanas
340g Currants
340g Brown sugar
340g Breadcrumbs
340g Melted Butter
110g Candied Peel
110g Halved Cherries
2 Cooking Apples Grated
1 Lemon Grated
1 Orange Grated
1.5 tsp Cinnamon
1.5 tsp Nutmeg
1.5 tsp Mixed Spice
110g Chopped Almonds
6 eggs
62 ml rum, brandy or whiskey

Method:

1. Mix all the ingredients together and leave overnight.

2. Fill pudding bowls, cover with greaseproof paper and tie with string.

3. Steam puddings for 7 hours.

4. Remove from bowl and cover with fresh greaseproof paper and store.

Serving suggestion:
Heat a knob of butter on a pan and fry slices until caramelised on
outside. Serve with Brandy Butter, Custard or cream or all three!!!
